I was planning on making tilapia with a seasoning that Earthmama recommended a couple of weeks ago, but, alas, a fish dish was not in the cards for this week.
Instead, I made (or am making right now rather) oatmeal in the slow cooker. I know, not much of a challenge for this week, but it is all I have the energy for and I have always wanted to make it. I LOVE oatmeal in the morning but I don't love how long it takes to make. My little ones wake up extremely hungry and we are likely to start the day off with a tantrum if I do not get up extra early to make it (and this often involves a tantrum of some sort on my part--I am not a morning person).
So we are al going to have a little something warm waiting for us tomorrow morning. I will report back tomorrow.
Here is what I added to the slow cooker:
{handful of dried blueberries}
{2 cups oats}
{7 cups water}
{I cup milk}
{Pinch of salt}

I know this will sound super dumb and instant momish, but do you use regular oats? Like from the box? Like the Quaker kind? Not that I can serve it anyway because your godson would puke if I gave him oatmeal. He has serious issues with certain textures (oatmeal, mashed potatoes, certain kinds of soup). But, his younger brothers might enjoy?!
I'm excited to hear how this goes. We too love the oatmeal but I hate how long it takes to make in the morning.
I have always wanted to try this too. I'm so excited to see how yours turn out. As for the morning thing. I used to be a morning person until I had kids.

My son wakes up VERY cranky as well. He always seems much better about 15 minutes after he eats. I try to get food on the table as soon as I can. Here is a great thing to try with oatmeal:
Cook a pot of Steel Cut Oats (these are the harder, thicker pieces of oats, not the flakes). Then, spread the oatmeal into a loaf baking dish. Refrigerate overnight. Now for the good part. Melt a generous amount of butter in a frying pan (I use cast iron). Cut 1/2 to 3/4 inch slices of the oatmeal from the baking dish. Fry them in the butter until nice and crispy light brown on both sides. We eat them with a bit of maple syrup, and often with a sprinkling of slivered almonds. Sliced banana or some apple sauce are also good companions.
what a nice idea, i bet the blueberries will impart a lovely flavor. i am enjoying seeing all of the other cooking challenge post as well!
