On The Table

We are a meat eating family.  Up until now, nearly every dinner contained some sort of meat, poultry or fish.  I was once a vegetarian (for about 6 years), but if ever there was born a woman who was meant to eat meat, it was me.   I really love it and I become very very anemic in its absence in my diet.
BUT I do recognize that one can get too much of a good thing, especially when that one thing also puts a significant dent in the grocery bill each week.  In an effort to conserve resources of all kinds, we are eating vegetarian 1-2 nights each week.  
I have made mujadara before.  Long ago, I learned of the recipe here and have made it numerous times since.  Lately it has become a bimonthly staple on our dinner menu (much to the dismay of our middle child) and we love it (except for said onion-disliking middle child). It is an easy recipe to make; I often make it when I am low on groceries as I always have lentils, rice, and onions on hand.
My husband and I are also spice lovers and this meal, to me, calls out for some spice.  I found this recipe and added some chopped jalapenos to greek yogurt, and a delicious meal got even tastier.

I am making a conscious effort around here to make several meals a month from things we already have in the pantry. Might have to give this one a try!

We've been trying to indulge in meat only a couple times a week - it will be harder when bbq season hits us. I'm fortunately not a meat-lover so we do okay but I'm always happy to learn of a new meat-free recipe! I wonder if I could get my kids to eat this one...

Yum! I am not doing a very good job of adding vegetarian meals to our weekly evening meals, but it is a goal of mine. This meal sounds lovely!

This looks so, so good. I love all of these ingredients. We're a big meat eating family, too, and it certainly does put a ding in the old checking account.
