There is so much coming from the garden right now. We have:
:edamame: pulled the plants along with the beans out of the ground. Can't wait to serve them with some sea salt tomorrow
:Cubanelle peppers: think I might be the only one in the house who likes them. More for me!
:tomatoes: a garden visitor got to our first one before we did!
:jalapenos: these I have to share. Jalapeno poppers. Yum!!!
:cucumbers: slicing and pickling. Now I just need to get my courage up for some canning. Does it make you nervous too?

So much deliciousness. Canning scares me to death, but I just dove right in with my pickles last week (sadly our cukes flopped, so I bought a 25 lb. bag--what was I thinking). I used the "Quicker Kosher Dills" recipe from Canning for a New Generation, and I have a final batch of the longest version recipe fermenting in my closet. We haven't tried any of the first two batches yet because I said we had to finish our jar of store-bought pickles first. This is just a stalling tactic on my part in case NO ONE likes the pickles I canned and I have to figure out what to do with 11 quarts of pickles!!! Good luck!
Canning scares me, too. Everyone says it's not that big a deal but it seems like a very big deal to me. Maybe someday I'll jump on the bandwagon. So far our harvest hasn't outpaced our consumption so I'm hoping I won't have to deal with it at all!
Hello! Checking back in after such a long time away. This picture in particular caught my eye. The colors... gorgeous. And you know I love food, especially if it is home grown! ;) A nice thing to know about pickles and canning... the more acid there is in something you can, the less likely it is to spoil! So, did you take the plunge?
